Shrimp Briyani

Ingrediants:
  1. Shrimp-2pounds
  2. Big onion-1
  3. Tomato-2
  4. Green chilly-1
  5. Chilly powder-2tsp
  6. Coriander powder-2tsp
  7. Garam masala-1tsp
  8. Ginger garlic paste-1tsp
  9. Basmati rice-3cups
  10. Yogurt-2tsp
To Season:
  1. Cinnamon-1
  2. Cloves-2
  3. Cardomem-2
  4. Bay leaf-2

    To Marinate:
    1.  Chilli powder-1tsp
    2. Corainder powder-1tsp
    3. Ginger garlic paste-1tsp
    4. Salt-to taste
    Procedure:
    1. Marinate shrimp with the above and keep it for abt 1/2 hour.
    2. Take a pan add some oil add shrimp little by little.
    3. Chop onion,tomatoes and green chilly finely.
    4. Take  an Electric cooker add rice and add water to it(1cup rice=11/2 cup of water).
    5. Once rice gets cooked keep it aside.
    6. Heat a pan with oil add the items  to season.
    7. Allow it to splutter,add the chopped onion,tomatoes and green chilly.
    8. With the above add the powders,salt and yogurt to it.
    9. Once it boils add the shrimp to it and coriander leaves.
    10. Finally add the rice to it and mix it well.
    11. Serve hot with raita.

      Vendakkai Morekulambhu

      Ingrediants:
      1. Lady's finger-5 to6
      2. Big onion-1
      3. Yogurt-3tsp
      4. Turmeric powder-1tsp
      5. Coriander leaves-to garnish
      To grind:
      1. Cumin seeds-1tsp
      2. Coriander seeds-1tsp
      3. Channa dhal-1tsp
      4. Coconut-Handful
      5. Green chillies-2
      6. Onion-little
      To Season:
      1. Mustard seeds-1tsp
      2. Fenugreek seeds-1/2tsp
      3. Red chilly-1
      4. Curry leaves-3-4

        Procedure:
        1. Chop onion finely.
        2. Chop Lady's finger 1/2 inch each.
        3. Grind the items given above.
        4. Mix yogurt with  a cup of water and add turmeric powder with it  and keep aside.
        5. Take a pan add some oil fry onion, vendakkai and add some water and allow it to boil.
        6. Then add the grinded paste  add salt and allow it to boil.
        7. Finally add the buttermilk and switch off  immediately
        8. Then season with the items in seperate pan and add it with the mixture.
        9. Garnish with coriander leaves.

        Blackeyed peas kulambhu

        Ingrediants:

        1. Blackeyed peas-1cup
        2. Onion-1
        3. Tomato-2
        4. Chilli powder-2tsp
        5. coriander powder-2tsp
        6. turmeric powder-1/2tsp
        7. salt-to taste
        8. Mustard seeds-1tsp
        9. Urad dhal-1tsp
        10. Fennel seeds-1tsp
        11. Fenugreek seeds-1/2tsp
        12. Coriander leaves-to garnish
        13. Tamarind juice-1cup
        14. Eggplant-4







        Procedure:
        1. Soak peas overnight and pressure cook for abt 2 whistles
        2. Heat a pan add some oil allow mustard seeds,urad dhal,fenugreek and fennel to splutter.
        3. Chop onion,tomato finely,chop brinjal lengthwise.
        4. Add the chopped onion,tomato,brinjal and salt to it.
        5. Then add the powders ad fry them. 
        6. Add the tamarind  and allow them to boil until the raw smell goes away.
        7. Then add the cooked peas along with its stock.
        8. Now turn to low flame so that u  get thicker.
        9. Serve hot.

        Nethili karuvadu fry

        Ingrediants:
        1. Anchovies-1cup
        2. Big onion-1
        3. Tomato-2
        4. Tamarind juice-1cup
        5. chilli powder-2tsp
        6. coriander powder-2tsp
        7. turmeric powder-1/2tsp
        8. coriander leaves-to garnish






        Procedure:
        1. Chop onion and tomato finely.
        2. Heat a pan add some oil add the chopped onions and tomato until it mashes well
        3. Then add all the powders  to it and stir well
        4. Do not add salt because anchovies already contains salt in it
        5. Then add the tamarind juice to it and allow it to boil.
        6. Once the raw smell goes away add the karauvadu to it.
        7. Allow it until it becomes dry
        8. Serve hot.

        Chicken varuval

        Ingrediants:
        1. Chicken-2pounds
        2. Onion-1
        3. Chilli powder-1tsp
        4. Turmeric powder-1tsp
        5. coriander powder-1tsp
        6. ginger garlicpaste-1tsp
        7. yogurt-2tsp
        8. coconut-1/4cup
        9. Garam masala-1/2tsp
        10. Mustard seeds-1tsp






          Procedure:
          1. Marinate chicken  with chilli powder,coriander powder,gingergarlicpaste,yogurt,turmeric powder,garam masala and leave it for abt 1/2 hour
          2. Heat  a pan add some oil  allow mustard seeds to splutter and then add the onion fry  well
          3. Then add the marinated chicken  and allow it until the water oozes out.
          4. Once the chicken gets cooked well add the coconut milk
          5. Allow it untill it becomes dry.
          6. Serve hot.

             

            Tomato pulav






            Ingrediants:
            1. Tomato puree-2 cups
            2. Basmati rice-3cups
            3. Big onion-1
            4. chilli powder-1tsp
            5. turmeric powder-1tsp
            6. garlic-4pods
            7. salt-to taste
            8. Green chilies-2
            9. cinnamon-1
            10. cloves-2
            11. bayleaf-1
            12. coconut milk-1cup
            Procedure:
            1. Chop onion,green chillies lengthwise.
            2. Soak the rice in water for atleast 10 mins
            3. Take a pressure cooker add some oil season with cinnamon,cloves and bay leaf.
            4. Add the chopped onion,garlic,green chillies and fry for few mins
            5. Then add salt,turmeric and chilli powder.
            6. Add the tomato puree(1cup rice=11/4cup water+coconut milk)
            7. Allow it to boil,once it boils add the soaked rice and stir well
            8. Allow one whistle  and serve hot with raita.

            Pasiparupu sambar

            Ingrediants:
            1. pasiparupu-1/2cup(Moong dhal)
            2. onion-1
            3. tomato-1
            4. chilly powder-1tsp
            5. sambar powder-1tsp(optional)
            6. salt-to taste
            7. coriander leaves-to garnish
            8. hing-a pinch
            9. turmeric powder-1tsp
            10. mustard seeds-1tsp
            11. urad dhal-1tsp
            Procedure:
            1. Take a pressure pan add moongdal,oil,turmeric powder,hing and pressure cook for abt 2 whistles.
            2. Chop onion and tomatoi finely.
            3. Take a pan add some oil season with mustard seeds and urad dhal,allow it to splutter.
            4. Add the chopped onion and tomato  and fry well until it becomes smashy.
            5. Then add cooked moong dhal along with its stock.
            6. With it add all the powders and allow it to boil.
            7. Finally garnish with coriander leaves.
            8. serve hot with idli,dosa.

            DryFish gravy(karuvadu)






            Ingrediants:

            1. Macakareal-1pound              
            2. Onion-1
            3. Tomato-2
            4. gingergarlic paste-1tsp
            5. chilli powder-2tsp
            6. coriander powder-2tsp
            7. turmeric powder-1/2tsp

            Procedure:
            1. Take a pan add some oil fry fish and keep aside.
            2. Mince onion and tomato finely.
            3. Heat a oil in a pan add the chopped onion and tomatoes.
            4. Then add the gingergarlic paste,chilly,coriander and turmeric powders.
            5. Add some water and allow it to boil.
            6. Once the raw smell goes away add the fried fish to it(do not add salt because dry fish already contains salt in it)
            7. Do not stir because it will break.
            8. serve hot.

            Peanut chutney





            Ingrediants:
            1. Peanut-1cup
            2. coconut-4tsp
            3. Red chilly-4
            4. Tamarind-small gooseberry size
            5. garlic-2
            6. salt-to taste.
              To season:
              1. Mustard seeds-1tsp
              2. Urad dhal-1tsp

              Procedure:
              1. Take apan add some oil and roast peanuts until it becomes light brown.
              2. Grind peanut,garlic,redchilly,tamarind,coconut and salt 
              3. Finally season with mustard seeds and coriander leaves.

              Mushroom Briyani

              Ingrediants:
              1. Mushroom
              2. onion-1
              3. Tomato-2
              4. Green chillies-3
              5. ginger garlic paste-1tsp
              6. cinnamon-1
              7. clove-2

              9. Fennel seeds-1tsp
              10. ghee-1tsp
              11. coriander leaves-a handful
              12. Mint leaves-a handful





              Procedure:
              1. Heat a pressure  cooker add some ghee allow cinnamon,clove,fennel seeds,bayleaf to splutter.
              2. Chop Onion,tomato,mushroom and green chillies lengthwise.
              3. Then add the chopped onion,tomato,green chilllies,ginger garlic paste and fry until the raw smell goes away.
              4. Add salt to it.
              5. 1cuprice=11/4cup(water+coconut milk)
              6. After it boils add the soaked rice and stir well.
              7. serve hot with raita.

              9. coriander leaves-handful
              10. chilipowder-2tsp
              11. corainder powder-2tsp
              12. turmeric powder-1tsp
              13. basmati rice-3cups
              14. yogurt-2tsp
              15. salt-to taste
              16. ghee-1tsp
              17. coconut milk
              18. green chilli-1








              To Season:
              1. Cinnamon-1
              2. cloves-2cardomam-2
              3. bayleaf-1
                To Marinate:
                1. chicken
                2. chilli powder-1tsp
                3. corainder powder-1tsp
                4. turmeric powder-1tsp
                5. salt-to taste
                6. yogurt-2tsp


                Procedure:
                1. Marinate chicken with the above items and keep it for atleast 1 hour
                2. Take an pressure cooker add some ghee and allow the items to season.
                3. Soak rice for abt an hour.
                4. Then add the chopped onion,green chilly and tomato.
                5. Add mint leaves,coriander leaves ,salt and the remaining powders.(1tsp chilli and coriander powder)
                6. Then add the marinated chicken allow it to fry until the water oozes out from the chicken.
                7. 1cup rice=11/4(water+coconut milk)
                8. Add water and coconut milk by the ratio given above.
                9. allow it to boil.
                10. Once it boils well add the soaked rice and stir well.
                11. close the lid and allow one whistle.
                12. serve hot with raita.

                Ingrediants:

                4. chilly powder-2tsp
                5. coriander powder-2tsp

                7. Mustard seeds-1tsp

                Procedure:
                1. chop onion and tomato finely.
                2. Take apan add some oil.allow the mustard seeds to splutter.
                3. Add the chopped onion and tomato
                4. Then add the garlic ,salt and powders mentioned above.
                5. Mix some water with it and allow it to boil
                6. wait until the raw smell goes away and serve hot.

                Mutton kola fry

                Ingrediants:
                1. Ground mutton
                2. onion-1
                3. cinnamon-1
                4. cloves-2
                5. fennel seeds-1tsp
                6. coconut-handful
                7. pottukadalai-handful
                8. green chillies-2
                9. salt-to taste
                10. rice flour-2tsp
                11. corn flour-2tsp
                   Procedure:

                  To make kola:
                  1. Take a onion chop it.
                  2. use a blender to add chopped onions,green chillies,cinnamon,clove,fennel seeds,coconut,pottukadalai  and grind it to smooth paste(dont add too much water becoz  u cannot make kola)
                  3. To that add rice flour ,corn flour,ground muttin and salt.
                  4. wash ur hands and make balls(becoz it will be sticky).
                  5. Deep fry it and serve hot.

                      6. Finally add the meat balls to it (dont stir it because it will break)
                      7. Serve hot with rice,chappathi.

                        Procedure:
                        1. Chop onion,tomato and mushroom.
                        2. Take a pan add some oil then add the chopped onion and tomato.
                        3. Add salt and all the powders,fry well until tomato smashes well.
                        4. Add the mushroom and add little water to it
                        5. Dont add too much water because mushroom itself leaves water from it.
                        6. close the pan so that the  raw smell goes way.
                        7. serve hot.

                        Chicken kulambhu

                        1. Chicken
                        2. Big onion-1
                        3. tomato-2
                        4. turmeric powder-1/2tsp
                        5. chilliy powder-3tsp

                        8. cinnamon-1
                        9. cloves-2
                        10. fennel seeds-1tsp



                          Procedure:
                          1.  Mince onion and tomato finely.
                          2. Take a pressure cooker add oil and season with cinnamon,clove and fennel seeds.
                          3. Then add chopped onion and tomato.
                          4. Then add all the powders and salt to it.
                          5. Then add the chicken with it and fry for few mins.
                          6. Add 2 to 3 cups of water to it and close the cooker.
                          7. Allow it for 2 whistles and after then if it is watery allow it to boil .(in medium flame)
                          8. Serve hot with rice,chappathi and dosa.

                          Mutton gravy

                          Ingrediants:
                          1. Mutton-
                          2. onion-1
                          3. Tomato-2
                          4. cinnamon-1
                          5. cloves-2
                          6. fennel seeds-1tsp

                          9. turmeric powder-1/2 tsp
                          10. salt -to taste
                          11. coriander leaves-3 to 4 leaves

                            Procedure:
                            1. pressure cook mutton for about two whistles.
                            2. Mince onion and tomato very finely.
                            3. Take a pan add some oil season with cinnamon,clove and fennel seeds.
                            4. Add  minced onion,tomato,salt and all the powders.
                            5. Finally add the mutton along with its stock and allow it to boil.
                            6. wait until u get the gravy,garnish with coriander leaves.
                            7. serve hot with rice,chappathi.

                            Chicken spring rolls

                            Ingrediants:

                            1. cabbage-1
                            2. onion-1
                            3. carrot-1
                            4. ground chicken
                            5. ginger garlic paste-1tsp
                            6. chilli powder-1tsp
                            7. soysauce-1/2tsp
                            8. chillisauce-1/2tsp
                            9. green chillies-2
                            10. turmeric powder-1/2tsp
                            11. cumin seeds-1tsp
                            12. spring roll sheets
                                                                           




                            Procedure:

                            To make Filling:
                            1. Mince cabbage,onion very finely.shred carrot.
                            2. Take a pressure cooker add chicken and allow it for 2 whistles.
                            3. Take apan add some oil and allow cumin seeds to splutter.
                            4. Then add onion,green chillies,gingergarlic paste allow it until the raw smell goes away.
                            5. Add cabbage,carrot ,chicken(withstock),turmeric powder,chillipowder and salt
                            6. Finally add soya sauce and chilli sauce with it.
                            To make Rolls:
                            1. Take 2 spring roll sheets.Take a corner apply some water to it.
                            2. Add the filling to it and roll it.
                            3. After a certain extend again apply water to it and make foldings.
                            4. finally if u r done with rolls deep fry it and serve hot.

                            Ground chicken fry

                            Ingrediants:
                            1. Ground chicken
                            2. onion-1
                            3. chilli powder-1tsp
                            4. turmeric powder-1tsp
                            5. mustard seeds-1tsp
                            6. urad dhal-1tsp
                            7. salt-to taste
                                                          
                            Procedure:
                            1. Take a pressure cooker add chicken  with water and allow it for 2 whistles.
                            2. Take a pan add some oil,mustards seeds,urad dhal and allow it to splutter.
                            3. Then add the minced onion,chicken(along with its stock),turmeric powder,chilli powder and salt.
                            4. allow it to fry until it becomes dry.
                            5. serve hot.

                            Cabbage fry

                            Ingrediants:
                            1. Cabbage-1
                            2. onion-1/2
                            3. mustard seeds-1tsp
                            4. urad dhal-1tsp
                            5. channa dhal-1tsp
                            6. chilli powder-1tsp
                            7. turmeic powder-1/2tsp
                            8. salt-to taste





                            Procedure:
                            1. Mince cabbage very finely.
                            2. Take a pressure cooker put the cabbage along with some water.
                            3. Allow it for one whistle(too much of cooking will spoil the recipe)
                            4. Heat apan with oil add mustard seeds,urad dhal and channa dhal allow it to splutter.
                            5. Then add the chopped onions.
                            6. Add cabbage along with its stock,with it add all the powders and salt to taste(dont close the lid since it will smash the cabbage)
                            7. serve hot.

                            Onion Tomato chutney





                            Ingrediants:

                            1. Big onion-1
                            2. Tomato-1
                            3. Urad dhal-2tsp
                            4. Hing-a pinch
                            5. Red chilly-4
                            6. Coconut-2 tsp
                            7. salt
                            8. Ginger garlic paste(optional)
                            To Season:
                            1. Mustard seeds-1tsp
                            2. curry leaves-2 to 3
                            Procedure:
                            1. Heat oil in a pan add  urad dhal and fry for few seconds.
                            2. Then add redchilly,hing,onion,tomato,salt and coconut.
                            3. Then grind the above into a fine paste.
                            4. Then season with the items to season.
                            5. serve hot with idli and dosa.

                            Coriander chutney





                            Ingrediants:
                            1. Coriander leaves-a bunch
                            2. Urad dhal -3tsp
                            3. Tamarind- a pinch
                            4. Hing- a pinch
                            5. Redchilly-4
                            6. salt-to taste
                            To Season:
                            1. Mustard seeds-1tsp
                            Procedure:
                            1.  Heat oil in a pan add urad dhal allow it to fry.
                            2. Then add red chilly,tamarind,hing,coriander ,salt with it.
                            3. Grind the above with the blender.
                            4. Finally season with the mustard seeds.
                            5. Serve with idli and dosa.

                            Thakali thokku




                            Ingrediants:
                            1. BigTomato-3
                            2. chilly powder-2tsp
                            3. salt
                            To season:
                            1. Mustard seeds-1tsp
                            2. Hing-a pinch
                            Procedure:
                            1. Chop tomatoes,with it add chilli powder and salt
                            2. Use a blender to blend the above.
                            3. Take a pan add some oil and allow the items to season.
                            4. Add the blended mixture with it and allow it to boil(keep in low flame)
                            5. Allow until the oil seperates from the mixture.
                            6. Serve with idli,dosa,rice.

                            Urad dhal chutney

                            Ingrediants:
                            1. Urad dhal-1/4 cup
                            2. coconut-2tsp
                            3. red chilly-3
                            4. tamarind- a pinch
                            5. Hing- a pinch
                            6. salt
                            To season:
                            1. Mustard seeds-1tsp
                            2. curry leaves-3 leaves
                            Procedure:
                            1. Heat oil in a pan add urad dhal and allow it to fry(it shouldnt become too dark)
                            2. Then add red chilly,tamarind,hing,coconut ,salt with it.
                            3. Allow it to cool for  a while.
                            4. Use the blender to grind it.
                            5. Finally season it with mustard seeds and curry leaves.
                            6. serve with idli and dosa.

                            Vegetable kurma







                            Ingrediants:
                            1. Big onion-1
                            2. Tomatoes-2
                            3. carrot-1
                            4. frozen peas-handful
                            5. beans-handful
                            6. potato-2
                            7. green chillies-2
                            8. coriander powder-4tsp
                            9. coconut-handful
                            10. salt-as per taste
                            11. cinnamon-1
                            12. cloves-2
                            13. fennel seeds-1 tsp
                            14. turmeric powder-1tsp
                            Procedure:
                            1. Mince onion ,tomato  finely.
                            2. cut the vegetables.
                            3. Take a pressure pan add oil and season with cinnamon,clove and fennel seeds.
                            4. Then add chopped onion,tomatoes,green chillies and salt.
                            5. Now put the vegetables, turmeric powder,coriander powder and add water with it.
                            6. Allow upto 2 whistles.
                            7. Then grind coconut with little water using blender and add with it
                            8. Allow it to boil for few min (if u feel its watery)
                            9. Serve hot.
                            Serve with Rice,chappathi.

                            Chettinad chicken recipe

                            Ingrediants:
                            1. chicken-1pounds
                            2. onion-1
                            3. Tomato-2
                            4. cinnamon-1
                            5. clove-2
                            6. coriander seeds-1tsp
                            7. Redchilly-4 to 5.
                            8. cumin seeds-1tsp
                            9. fennel seeds-1tsp
                            10. ginger-1
                            11. garlic-1
                            12. cocunut-2tsp
                            13. Garam masala-1/2 tsp
                            14. turmeric powder-1 tsp
                            15. coriander leaves 








                              Procedure:

                              1. Mince onion and tomatoes finely.add some oil.fry them and grind to a fine paste.
                              2. Make a  masala paste of cinnamon,clove.ginger,garlic,chilly,coriander seeds,cumin,fennel and coconut
                              3. Take a pan  add oil with that add the onion tomato paste.
                              4. Then add the chicken pieces ,turmeric powder and salt to it.
                              5. Now add the ground masala paste fry for 2to 3 mins and add little water to it.(dont add too much of water because chicken itself will ooze out water.
                              6. If u feel like adding more spices to ur recipe add garam masala.
                              7. Finally add coriander leaves to garnish.
                              serve hot with:Rice,chappathi.

                              Redrice sweet

                              Ingrediants:
                              1.  Redrice-1cup(kavuni arisi)
                              2.  sugar-1/2cup
                              3.  cardomam-4 to 6
                              4.  coconut-2tablespoons




                              Procedure:
                              1. Take  a cup of Red rice add 3 cups of water to it and pressure cook it for abt 10 to 12 mins.
                              2. If the Rice doesnt cook well keep it for some more time.
                              3. After it gets cooked well add sugar  and cardomam with it.
                              4. Finally add coconut and serve hot.
