Shrimp Briyani

Ingrediants:
  1. Shrimp-2pounds
  2. Big onion-1
  3. Tomato-2
  4. Green chilly-1
  5. Chilly powder-2tsp
  6. Coriander powder-2tsp
  7. Garam masala-1tsp
  8. Ginger garlic paste-1tsp
  9. Basmati rice-3cups
  10. Yogurt-2tsp
To Season:
  1. Cinnamon-1
  2. Cloves-2
  3. Cardomem-2
  4. Bay leaf-2

    To Marinate:
    1.  Chilli powder-1tsp
    2. Corainder powder-1tsp
    3. Ginger garlic paste-1tsp
    4. Salt-to taste
    Procedure:
    1. Marinate shrimp with the above and keep it for abt 1/2 hour.
    2. Take a pan add some oil add shrimp little by little.
    3. Chop onion,tomatoes and green chilly finely.
    4. Take  an Electric cooker add rice and add water to it(1cup rice=11/2 cup of water).
    5. Once rice gets cooked keep it aside.
    6. Heat a pan with oil add the items  to season.
    7. Allow it to splutter,add the chopped onion,tomatoes and green chilly.
    8. With the above add the powders,salt and yogurt to it.
    9. Once it boils add the shrimp to it and coriander leaves.
    10. Finally add the rice to it and mix it well.
    11. Serve hot with raita.

      Vendakkai Morekulambhu

      Ingrediants:
      1. Lady's finger-5 to6
      2. Big onion-1
      3. Yogurt-3tsp
      4. Turmeric powder-1tsp
      5. Coriander leaves-to garnish
      To grind:
      1. Cumin seeds-1tsp
      2. Coriander seeds-1tsp
      3. Channa dhal-1tsp
      4. Coconut-Handful
      5. Green chillies-2
      6. Onion-little
      To Season:
      1. Mustard seeds-1tsp
      2. Fenugreek seeds-1/2tsp
      3. Red chilly-1
      4. Curry leaves-3-4

        Procedure:
        1. Chop onion finely.
        2. Chop Lady's finger 1/2 inch each.
        3. Grind the items given above.
        4. Mix yogurt with  a cup of water and add turmeric powder with it  and keep aside.
        5. Take a pan add some oil fry onion, vendakkai and add some water and allow it to boil.
        6. Then add the grinded paste  add salt and allow it to boil.
        7. Finally add the buttermilk and switch off  immediately
        8. Then season with the items in seperate pan and add it with the mixture.
        9. Garnish with coriander leaves.

        Blackeyed peas kulambhu

        Ingrediants:

        1. Blackeyed peas-1cup
        2. Onion-1
        3. Tomato-2
        4. Chilli powder-2tsp
        5. coriander powder-2tsp
        6. turmeric powder-1/2tsp
        7. salt-to taste
        8. Mustard seeds-1tsp
        9. Urad dhal-1tsp
        10. Fennel seeds-1tsp
        11. Fenugreek seeds-1/2tsp
        12. Coriander leaves-to garnish
        13. Tamarind juice-1cup
        14. Eggplant-4







        Procedure:
        1. Soak peas overnight and pressure cook for abt 2 whistles
        2. Heat a pan add some oil allow mustard seeds,urad dhal,fenugreek and fennel to splutter.
        3. Chop onion,tomato finely,chop brinjal lengthwise.
        4. Add the chopped onion,tomato,brinjal and salt to it.
        5. Then add the powders ad fry them. 
        6. Add the tamarind  and allow them to boil until the raw smell goes away.
        7. Then add the cooked peas along with its stock.
        8. Now turn to low flame so that u  get thicker.
        9. Serve hot.

        Nethili karuvadu fry

        Ingrediants:
        1. Anchovies-1cup
        2. Big onion-1
        3. Tomato-2
        4. Tamarind juice-1cup
        5. chilli powder-2tsp
        6. coriander powder-2tsp
        7. turmeric powder-1/2tsp
        8. coriander leaves-to garnish






        Procedure:
        1. Chop onion and tomato finely.
        2. Heat a pan add some oil add the chopped onions and tomato until it mashes well
        3. Then add all the powders  to it and stir well
        4. Do not add salt because anchovies already contains salt in it
        5. Then add the tamarind juice to it and allow it to boil.
        6. Once the raw smell goes away add the karauvadu to it.
        7. Allow it until it becomes dry
        8. Serve hot.

        Chicken varuval

        Ingrediants:
        1. Chicken-2pounds
        2. Onion-1
        3. Chilli powder-1tsp
        4. Turmeric powder-1tsp
        5. coriander powder-1tsp
        6. ginger garlicpaste-1tsp
        7. yogurt-2tsp
        8. coconut-1/4cup
        9. Garam masala-1/2tsp
        10. Mustard seeds-1tsp






          Procedure:
          1. Marinate chicken  with chilli powder,coriander powder,gingergarlicpaste,yogurt,turmeric powder,garam masala and leave it for abt 1/2 hour
          2. Heat  a pan add some oil  allow mustard seeds to splutter and then add the onion fry  well
          3. Then add the marinated chicken  and allow it until the water oozes out.
          4. Once the chicken gets cooked well add the coconut milk
          5. Allow it untill it becomes dry.
          6. Serve hot.

             

            Tomato pulav






            Ingrediants:
            1. Tomato puree-2 cups
            2. Basmati rice-3cups
            3. Big onion-1
            4. chilli powder-1tsp
            5. turmeric powder-1tsp
            6. garlic-4pods
            7. salt-to taste
            8. Green chilies-2
            9. cinnamon-1
            10. cloves-2
            11. bayleaf-1
            12. coconut milk-1cup
            Procedure:
            1. Chop onion,green chillies lengthwise.
            2. Soak the rice in water for atleast 10 mins
            3. Take a pressure cooker add some oil season with cinnamon,cloves and bay leaf.
            4. Add the chopped onion,garlic,green chillies and fry for few mins
            5. Then add salt,turmeric and chilli powder.
            6. Add the tomato puree(1cup rice=11/4cup water+coconut milk)
            7. Allow it to boil,once it boils add the soaked rice and stir well
            8. Allow one whistle  and serve hot with raita.

            Pasiparupu sambar

            Ingrediants:
            1. pasiparupu-1/2cup(Moong dhal)
            2. onion-1
            3. tomato-1
            4. chilly powder-1tsp
            5. sambar powder-1tsp(optional)
            6. salt-to taste
            7. coriander leaves-to garnish
            8. hing-a pinch
            9. turmeric powder-1tsp
            10. mustard seeds-1tsp
            11. urad dhal-1tsp
            Procedure:
            1. Take a pressure pan add moongdal,oil,turmeric powder,hing and pressure cook for abt 2 whistles.
            2. Chop onion and tomatoi finely.
            3. Take a pan add some oil season with mustard seeds and urad dhal,allow it to splutter.
            4. Add the chopped onion and tomato  and fry well until it becomes smashy.
            5. Then add cooked moong dhal along with its stock.
            6. With it add all the powders and allow it to boil.
            7. Finally garnish with coriander leaves.
            8. serve hot with idli,dosa.
